A client approached us in order to advise them on creating a vegan burger non-breaded recipe. Their priority was creating a clean label recipe that could work easily in their production line. Our Food Technologist created a clean label recipe for the client that’s made from 40% sliced mushrooms cooked in their own liquid, together with wheat protein fibers for water binding capacity and bite.
The solution is gluten-free, vegan, and non-breaded.A new vegan product, the vegan mushroom burger, has been developed through intensive research on nutritional quality of proteins and mushrooms. The final result is a desirable high-quality product with low water content on the label. The protein content of this product is enhanced by a formulation that includes the soy-based protein isolate and blended chickpeas farinaceous flour to further improve texture and bite.
